- Para la masa. en un bols disponemos la manteca pomada batimos juntamamente con el azúcar y el huevo mas la ralladura y el harina cernida armar una masa sin amasar si quedara muy seca agregamos un poco de agua helada.
guardamos en films minimo 1hs en el regrigerador. una vez fria estiramos y fonzamos la tartera arriba agregamos un papel alumio con las legumbres deseadas y cocinamos en horno moderado durante 25' mts o hasta que este cocida. retiramos del horno y dejamos enfriar. - Para la crema de limón: Ponemos en un perol los huevos, la ralladura, el jugo, el azúcar y cocinamos a baño maria hasta lograr una crema espesa tratando de que los huevos no se cocinen en demasía, sino seria huevo revuelto frito! Cuando tiene consistencia cremosa retiramos del baño maria y agregamos la manteca fria cortada en trozos.
- Llenamos la tarta con esta crema super untuosa y cremosisima llevamos a la heladera unas 2 horas bien tapada para que no tome olores!
- En un perol agregamos las claras y el azúcar y trabajamos con la yema de los dedos tratando que se derritan los cristales del azúcar y se calienten las claras de modo que se vallan cocinando gradualmente las claras pero despacio no cocidas como un huevo frito siempre trbajando con la mano hasta que este tan caliente que ya no puedamos mas de caliente sacamos el perol del fuego y nos disponemos a batir las claras a velocidad máxima hasta que se enfrie y espese una vez espesa le agregamos el jugo de limón y seguimos batiendo.
- Una vez fria llenamos una manga con pico rizado y decoramos a gusto, y quemamos con soplete para decorar! refrigeramos hasta nuestro consumo.
- También puede hacerlo rústico solo con la cuchara o con pico liso de todas formas quedan super bonitos! quemados o no! quedan super bellos espero qls guste la receta y la preparen besos.
